Why This Recipe Works
- Minimal Prep: Everything comes together in a single mixing bowl.
- Flexible: Serve it as a main dish, a side, or even add your favorite proteins to customize.
- Make-Ahead Friendly: Freeze it for later and bake when needed—perfect for those low-energy days.
Ingredients
- 32 ounces frozen shredded hashbrowns, thawed
- 10.5 ounces condensed cream of chicken soup OR (1 can) cream of cheddar
- 16 ounces plain Greek yogurt or sour cream
- 2 cups shredded Colby cheese, divided (or cheddar cheese)
- ¼ teaspoon black pepper
- Optional: ¼ cup finely chopped onion (or onion powder to taste)
- Optional: Any other spices to your liking
- Optional: Crispy fried onions
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch casserole dish.
- In a large bowl, combine the thawed hashbrowns, soup, sour cream (or Greek yogurt), 1 ½ cups of shredded cheese, and black pepper and any other spices you desire. Stir until evenly mixed.
- Spread the mixture into the prepared baking dish and smooth the top.
- Sprinkle the reserved ½ cup of shredded cheese over the top and fried onions.
- Bake for 45-55 minutes, or until the casserole is hot and bubbly with a golden top.
Make It Freezer-Friendly
To freeze, prepare the casserole but stop before baking. Cover tightly with foil and store in the freezer for up to 3 months. When you’re ready to bake, remove from the freezer, let thaw in the fridge overnight, and bake as directed.
Pro Tips
- Protein Boost: Add cooked bacon, sausage, or diced ham to the mix.
- Veggie Twist: Stir in chopped broccoli, spinach, or bell peppers for extra nutrients.
- For a Crowd: Double the recipe and use two dishes—one for now, one for later!
This Easy Cheesy Hashbrown Casserole is my gift to all the spoonies out there (or anyone who could use an easy meal). It’s proof that comfort food doesn’t have to be complicated. Make it, freeze it, and savor the delicious simplicity when you need it most.
